We are pleased to announce that we have added a new specialty coffee to our popular coffee bar at the Omotesando main store. Two types of coffee, iced and hot, are available for order with a minimum order of one cup. We hope you will take a break from shopping and enjoy our coffee.

WHAT IS SPECIALITY COFFEE?

 Back in the 1970s in the United States, coffee was mass-produced and mass-consumed. The taste of coffee was gradually declining, and its popularity was also declining rapidly. In response to this situation, the term "specialty coffee" was created to protect not only the popularity of coffee, but also the producers and farms. Specialty coffees, which account for a mere 5% of the total coffee market, must meet strict standards in order to be called "specialty. In addition to tasting evaluations of sweetness, acidity, aftertaste, and flavor, there is also an evaluation of "cup cleanliness," just like in the wine world, and beans that have been processed in a way that detracts from the characteristics of the growing region cannot meet the standards. On the other hand, the producer side is also evaluated, and the criteria include not only quality control, but also assurance that the coffee farm and roaster are in good standing, that the relationship is healthy and sustainable, and that traceability has been achieved. Only those coffees that meet these strict criteria are called specialty coffees, and they are special cups of coffee that benefit both the consumer and the producer.
